Avocado pudding keto low carb

Chocolate avocado pudding PALEO + KETO + VEGAN. An easy healthy sweet treats, 100 % sugar free sweetened with sugar free flavored maple syrup (Monk Fruit) and low carb. Kid love it too!


INGREDIENTS

  • 2 ripe avocados about 1 cup mashed avocado ripe, remove any brown/dark spot in the flesh
  • 2/3 cup canned coconut milk
  • 1/3 cup sugar free flavored maple syrup or powdered sugar free sweetener
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt

SERVING IDEAS

  • 1 pinch coarse sea salt
  • 1 teaspoon sugar free chocolate chips or flakes

INSTRUCTIONS

  1. Scoop out the ripe avocado flesh into a blender or food processor. Make sure you remove any dark spot in the flesh, this is what cause weird avocado taste in avocado dessert recipe.
  2. Add in the rest of the ingredients, order doesn't matter.
  3. Blend/process on high speed for 1 minutes. Stop, scrap down the sides of the bowl, repeat for 20 seconds until there is no more lumps of avocado and it forms a silky smooth chocolate pudding.
  4. Taste the flavor, adjust sweetness by adding extra stevia drops if needed. If you want a more liquid pudding add more dairy free milk of your choice, 1 tablespoon at a time.
  5. Serve into ramekin or glass jar.
  6. Refrigerate at least 1 hour before serving. The flavor and texture will be better if served fresh.
  7. Store for 3 days in an airtight container in the fridge.
  8. The recipe serve 4 puddings.
