Avocado pasta sauce simple

Ingredients

  • 16 oz package spaghetti
  • 3 medium avocados, peeled and pitted
  • 3 cloves garlic, peeled
  • 1/2 cup fresh basil leaves
  • 1 1/2 tbsp lemon juice, freshly squeezed
  • salt and pepper to taste
  • 1/3 cup olive oil
  • 1 cup cherry tomatoes, halved

Instructions

  1. Bring a medium-large pot of salted water to a boil and add spaghetti.
  2. In a food processor or blender, add avocados, fresh basil, garlic, lemon juice, salt and pepper.
  3. Run food processor for 5-10 seconds before gradually adding olive oil, running for another 20-30 seconds until creamy.
  4. When pasta is al dente, drain and add to a large bowl. 
  5. Cool pasta slightly before mixing in avocado sauce and tomatoes. Serve immediately and enjoy!
